That looks like a dish I make, except that instead of only using veg I make a bolognese style meat sauce which I slowly simmer for at least 3 hours and then mix with cooked penne, place in an oval casserole dish and top with cheese sauce. Made with 1lb lamb mince and 1 pint of tomatoes etc plus 3 mugs of pasta it makes 4 main meals and a very substantial lunch for one.
That looks like such a wonderful dish!
